Our apples are different
In keeping with Balkan tradition, our vinegars are a blend of crab apples and wild grown ancient, native orchard apple species, the sweet Budimka and the thick skinned Kozara, both rich in fruit pectin and natural sugars.
Our process is different
Our fresh apples are crushed and the whole of the fruit is fermented naturally using airborne wild yeasts that dust the skin of the apples.
When the acidification is complete, the vinegars are racked until all but a small amount of sediment, known as mother of vinegar, remains. Again, we do not filter or pasteurize.
The vinegars are then blended with herbal extracts to enhance their health giving properties and bottled in dark green glass for protection from light to enable the acetobacter bacteria become active when consumed and add to the body's biota.
